The Birth of Organic Soy Sauce

The first of its kind in France,
made from locally grown organic soybeans and wheat!

The Challenge of Japanese Yuasa Soy Sauce

In the Bordeaux region, specifically in the Grand Saint-Émilionnais, France, Mr. Shinko met with winemakers to propose a partnership. As a master of soy sauce, he worked with them to transform a wine cellar into a soy sauce production facility. A vineyard had been acquired by his French partners, Adrien David Beaulieu and Madina Querre, and together, they converted part of it into a soy sauce brewing facility. Here, soy sauce is crafted using locally and organically grown soybeans and wheat.

Near Saint-Émilion, in Sainte-Terre, a field of grains dedicated to soy sauce production has unexpectedly emerged among the vineyards. This production is further supported by an organic grain farmer located about ten kilometers away. Thanks to Bordeaux’s unique climate, the locally sourced ingredients create a soy sauce that pairs perfectly with French cuisine.

The Soy Sauce Brewing Process in France

Since professional soy sauce-making machinery was unavailable, the process was developed through extensive research, utilizing local winemaking tools and crafting additional artisanal equipment specifically for soy sauce production.

Within the vineyard’s cellar, soybeans are steamed, then mixed with wheat and koji mold. This blend is then slowly aged for 200 to 700 days, depending on the soy sauce, in barrels and casks previously used for winemaking. The resulting moromi (fermented mash) is then pressed using a 1920s wine press.

The soy sauce is made using traditional Japanese brewing techniques.

A New Pursuit for Yuasa Soy Sauce

Through this experiment, we aim to observe whether the aging process continues after bottling and if it further enhances the depth of flavor. The cellar is maintained at a constant temperature of 12-16°C to keep the soy sauce fresh.
We take on this challenge with the hope of developing an even richer, more flavorful soy sauce.

Collaboration with a Château

Château Coutet has a history spanning 400 years. The young co-owner, Adrien David Beaulieu, passionate about organic wine and new challenges, has partnered with his companion to produce soy sauce in France at their estate in Sainte-Terre.
